What? No Peach Cobbler!!?

No peach cobblerHow many graduations have you traveled to this month? I arrived home this past week from northern Virginia and the graduation of a granddaughter—Salutatorian may I add!—just in  time for Father’s Day weekend with family members on their way to help celebrate, and the annual South Carolina Ridge Peach Festival.

 

Staring at my still unpacked suitcase, unwrapped gift for the father of my children, empty refrigerator and dirty laundry, I prayed remembering God helps those who CANNOT help themselves, and humbly decided the only peach cobbler that would make its way to the festival’s food stand from me would be one made with help of Sara Lee or Marie Callender.

 

I couldn’t believe it. Either the delivery truck with frozen desserts had been hijacked or every other woman in town had had the same idea. There was not a frozen peach cobbler, pie or tart to be found anywhere for miles. I can only hope no one left the festival truly hungry and promise to do better next year…

 

Forgiven, and back at my desk again after an ideal week and weekend with family and Siri as my Google guide through the Blue Ridge Mountains and Shenandoah Valley, I had to smile when my friend and clean comedy professional, Glenn Strange, shared this with me:

 

Traffic Signs:

A cop pulls over a car with 5 nuns on their way to an out of town meeting.
Cop: “Sister, this is a 65 MPH highway — why are you going so slow?”
Sister: “Sir, I saw a lot of signs that said 22, not 65.”
Cop: “Oh sister, that’s not the speed limit, that’s the name of the highway you’re on!”
Sister: “Oh! Silly me! Thanks for letting me know. I’ll be more careful.”
At this point, the cop looks in the backseat where the other nuns are shaking and trembling.
Cop: “Excuse me, Sister, what’s wrong with your friends back there? They’re shaking something terrible.”
Sister: “Oh, we just got off of highway 119.”

Bonus:  My easyCupa-Cupa-Cupa” Peach Cobbler recipe

Pre-heat the oven to 375.

Peel, pit and slice 6 peaches and set aside in a bowl.

 

In another bowl mix:

1 “cupa” (cup of) self-rising flour

1 “cupa” (cup of) sugar

1 “cupa” (cup of) milk

 

Put 1 stick of butter in the bottom of a 9X13” baking pan and melt it in the oven.

Remove the pan from the oven, let it cool a bit, and pour the flour mixture into the center of the melted butter. (No need to stir)

 

Pour the peaches into pan – beginning in the center (No need to stir)

Bake until golden brown – about 1 hour.

Serve warm with vanilla ice cream.
